How to Use the Machine

1. Before starting the machine, turn the grinding-stone adjustment dial against the direction of the red arrow so the stones move apart.
2. Then switch the machine on.
3. Once the machine is running, turn the stone dial slowly in the direction of the red arrow.
4. As soon as the sound of the machine changes, the stones have started to touch; stop there and do not tighten the stones any further.
5. Then feed the materials for grinding.
6. Sesame needs two grinding passes, while peanuts need one pass.
7. All materials to be ground must be roasted and free of moisture.

To make sesame tahini you need:

• Hulled white sesame, preferably Sudanese, roasted until all moisture is removed.
• Mix 1 kg of sesame with 150 g of sunflower oil, then feed the mixture into the machine. The first pass may give a slightly coarse texture; the second pass produces smooth tahini like the one available on the market.
• 1 kg of sesame with 150 g of oil yields 1.150 kg of tahini.
• Tahini sold on the market is a commercial product made of sesame, oil and flour or starch.
• The higher the sesame ratio, the better the tahini quality.
